DS has better graphics in some ways, but one thing that irked me about the DS version is that the characters' hands are always fists. In the N64 version Mario could open his hands and make the victory sign when he gets a star.

I never noticed that, actually.
The DS version has angry Hulk characters. They were locked in rooms for a while, so it is understandable.
Would rather go to Waffle Kingdom than this Mushroom crap.

There is really no way to make fingers pop up in Mario's model without eating into DS processing power. Hands are fairly complex models (still easier to create than faces, though), and the model is simplified to be a simplistic block with finger textures to make it resemble a closed fist. It's possible to create a model where two fingers jut out, but I don't think it'll look very good. In the N64 version, Mario's hands has only one color in the textures, so he can just get away by simply adding two blocks on top of his hands to give the illusion of fingers. I don't think the DS version has the same degree of freedom.
I recently went back to play the DS version on the 3DS and the joystick REALLY makes a difference. The control is much more fluid. I just wanted to add that for anybody who may have been turned off by the DS controls.
